Confectionery base: How to make the pastry #cream (crema pasticciera) - #Whitemascarpone

The pastry cream. Easy, fun, delicious.
 
The pastry cream is one of the most famous pastry basis... But it's also good to eat the way it is. You just need to add some fruits or chocolate...
But besides this, what you have to do is to try. Because pastry might seem difficult, complicated, time consuming... But it's not like this. I mean, not Always.
For example, in this case you just need some milk, eggs, vanilla, sugar and corn flour... And there it is.
The hardest part is done!

Pastry cream ingredients:
3 yolks - 90gr of sugar (almost 1/2 cup) - 25gr of corn flour (corn starch - almost 1/4 cup) - 300gr of milk (1 + 1/2 cups) - Vanilla seeds
 
  • Separate the whites from the yolks, and get the yolks
  • Put the milk in a bowl and add half of the amount of the sugar. Put it on a low flame
  • Add the rest of the sugar in the yalks, and whisk immediately
  • Add the corn flour to the egg mixture (I suggest to sift the flour everytime you use it) and keep stirring
  • If you find it, open the vanilla bean and get the seeds. Put the seeds in the eggs mixture
  • When the milk starts bubbling, it means that you can gradually put half of the milk in the bowl with the yolks, while you keep stirring the eggs
  • Once that you're done with this, put the eggs with half of the milk in the bowl where there is still the leftover of the milk on the flame
  • Then start whisking strongly
  • Be careful now, because you don't want the cream to become overcooked. So, wait till it bubbles again, then take it off the flame and stir it. Then, put it back on the flane for some seconds and, again, take it off and stir.
  • Once that the cream is done, put in another bowl and seal it with the cling wrap.
