The Grandmother's pie - la torta della nonna


In Italy (but I think also all over the world) the grandmothers are sacred.
And in my country they make part of the culture, they complete the family, take care of the grandchildren, tell stories of their youth.

And of course, they bake cakes and pies.

So, here's the grandmother's pie... A very simple but super tasty dessert made with cookie dough, pastry cream and pine nuts.



This is, in fact, one of the most common and delicious pies you can find here, no matter the region or the culinary traditions.

The Grandmother's pie is always the same, no matter where.

It's one of the easiest pies you can make at home, you just need some time to prepare the dough (here's the link to The Whitemascarpone cookie dough ), then the pastry cream (here's the link to our Whitemascarpone Youtube Channel ).

But make sure you follow the doses for this recipe, and you'll be fine!

The Grandmother's pie ingredients:
700gr (24,7oz) of pie dough - 400gr (14.01oz) of pastry cream - pine nuts

To make the cookie dough:
160gr of butter (1 + 1/2 stick) - 120gr of icing sugar (1 cup) - 300gr of plain flour (2 + 1/3 cups) - 3 yolks - vanilla seeds. (here's the video-recipe: The Whitemascarpone cookie dough )

To make the pastry cream:
400gr of milk - 4 yolks - 120gr of sugar - 35gr of corn starch (here's the video recipe on our Whitemascarpone Youtube Channel ).


  • Preheat the oven at 180°C (356°F);
  • Once that the dough is ready, make sure you store it in the fridge for approx. 45 minutes. After that, you can take it and roll it, always with the help of some flour under the dough;
  • Then, take a pan of 24, 26 cm of diameter and, after having rolled the dough, place it in the pan, then make some holes with a fork at the bottom of the pie;
  • Now you can now proceed with the blind bake, so get the alluminum foil, put it on the dough, then add some cooking salt to make enough weight;
  • Put the pie in the oven and bake it for at least 20 minutes;
  • Once that you're done with the blind bake, get the pie out of the oven, take the alluminum foil off the pie and finally fill it with the pastry cream (but don't exagerate with that... if you have some leftovers of the pie, save it for a nice cup of cream with some fruits!);
  • Roll another part of the dough, so you can top the pie. Then, again, make some holes with a fork on the dough.
  • The last part of the recipe: place the pine nuts on top of the pie and press them carefully;
  • Put the pie in the oven again for approx. 10, 13 minutes. After 5 minutes, open the window of the oven and, again (but very, very carefully because it's hot!!) press the pine nuts on the pie;
  • After 10, 13 minutes, your Grandmother's pie is ready, just let it cool for approx. 3,4 hours, and follow my video to find out how to take the pie off the pan!
  • Don't forget to sprinkle some icing sugar on top before tasting it!
